Hazelnut Purchase
Initial Processing

Sorting

Quality begins at the source. We work exclusively with trusted suppliers — partners we have relied on for decades — and purchase only the finest hazelnuts.

Each batch undergoes laboratory testing for moisture content and signs of rot. If the sample meets our strict standards, we confirm the purchase and offer a special price.

This is where our product quality starts: no compromises, only the best.

During the initial processing stage, hazelnuts are carefully loaded into drying bins for dehydration. Throughout this process, the product's moisture content is gradually reduced to an optimal level, ensuring long-term shelf stability while preserving the natural flavor and nutritional value of the kernels.

Reliability at Every Stage

At every step of hazelnut processing, we rely on proven, certified equipment that guarantees precise temperature control and uniform drying. Each batch is monitored closely to meet the highest quality standards.

Sorting is one of the most critical processes in hazelnut processing, and it is built on the skilled manual labour of many people. Every batch is carefully handled and inspected by our team, because the quality of the final product depends on this stage.

Each batch passes through two sorting stages. At the first stage, hazelnuts are cleaned of dust, shell residues and foreign particles. The sorted hazelnuts are then sent back to the sorting line for a final cleaning. At the second stage, hazelnuts are graded by size, and the required size fraction can be selected for processing according to the customer's order.

Post-Packaging Readiness

After the packaging process is complete and all quality-control checkpoints have been satisfied, the hazelnuts are deemed ready for sale and distribution to buyers. Each sealed unit is assigned a unique batch identification code, linked to the corresponding laboratory certificates, phytosanitary records, and production logs. This ensures full traceability from the processing facility to the final destination.

Warehousing Prior to Dispatch

Before shipment, packaged hazelnuts are transferred to a dedicated finished-goods warehouse where the following conditions are strictly maintained:

Temperature: 8–15 °C (for shelled kernels); up to 20 °C for in-shell product;

Relative humidity: no higher than 60–65%;

Ventilation: continuous air circulation to prevent condensation and localized heating;

Sanitation: regular pest-control inspections, clean and odor-free environment

Pre-Packaging Quality Control

Processed hazelnuts, in accordance with international food safety and quality standards (including ISO, Codex Alimentarius, and EU regulations), must be free from visible rot, mold, insect damage, foreign matter, and any signs of rancidity. Prior to packaging, each batch undergoes a thorough visual and instrumental inspection to ensure compliance with the required grade specifications.

The moisture content of the kernels must be strictly maintained within the range of 5.5% – 6.0%. This parameter is critical, as excess moisture promotes microbial growth and significantly reduces shelf life, while overly dry kernels become brittle and lose their characteristic flavor and texture.
